With beer glasses, always look at the space above the fill line. A 52 cl glass lets you pour 50 cl of beer and still leaves two centimetres for the head, which with weizen and tripel is the difference between pouring calmly and spilling over the rim. The 35 cl longdrink glass is exactly the size most cocktail recipes are written for, because three ice cubes, a measure of spirit and a small bottle of soft drink or tonic fit together precisely without the glass overflowing.

Rinse a beer glass with cold water before pouring: the foam clings better and the head lasts longer. Hold the glass at an angle, aim at the side and only bring it upright once it is half full. The longdrink glass calls for the reverse order to beer: ice first, then the spirit, then the bubbles. A dark and stormy is built up layer by layer this way, and a paloma has just enough room in 35 cl for grapefruit and salt.

Large glasses are more vulnerable in the dishwasher because they are taller and therefore knock against something sooner. Check that the top rack is set high enough and that the spray arm turns freely. Do not use rinse aid in excess for beer glasses, because a greasy film on the side makes the head collapse straight away. Turn the glasses over after rinsing so the water runs out.
