5 cl white rum
2 cl fresh lime juice
1.5 cl sugar syrup
8 strawberries (fresh or frozen)
1 cup crushed ice
How to make it

Remove the tops from the strawberries and halve them.

Put the rum, lime juice, sugar syrup and strawberries in the blender and pulse briefly until smooth.

Add the crushed ice and blend for 15 to 20 seconds until it has the texture of soft snow.

Spoon the daiquiri into a chilled margarita glass and garnish with half a strawberry on the rim.

The story

The Daiquiri comes from the Cuban mining village of the same name, where around 1898 an American engineer mixed rum, lime and sugar to combat the heat. More than twenty years later, bartender Constantino Ribalaigua of El Floridita in Havana put the first version in a blender - the frozen daiquiri was born, and Hemingway became a regular. The strawberry version came much later: when the electric blender conquered every American kitchen in the 1960s and 1970s, fruit was added. That turned a crisp three-part classic into the most ordered summer drink by the pool.

The right glass

A frozen daiquiri belongs in a wide, shallow stemmed glass: a margarita or daiquiri glass. The wide bowl gives you room to spoon the mixture in without compacting it, while the stem keeps your hand from warming the ice. Allow for 27 to 33 cl. Put the glass in the freezer for half an hour before you start - that saves minutes before your daiquiri starts to melt.

Variations & twists

Swap the strawberries for mango, banana or raspberry and you have a new recipe in one step. Serving tip

Use frozen strawberries instead of fresh: they are flavorful all year round, and because they are frozen, you need less ice. The result is a fuller, less watery daiquiri. Always blend briefly — blending for too long makes the mixture warm and thin.

Fresh or frozen strawberries?

Frozen strawberries almost always win: consistent flavor, and they cool the drink as they blend, so you need less ice. Fresh strawberries at their best (June–July) are more aromatic, though.

Can you also make it without a blender?

Yes. Purée the strawberries with a stick blender, shake them with the rum, lime and syrup, and pour over crushed ice. You won't get a frozen texture, but you will get the same flavor.

Can you make a Strawberry Daiquiri alcohol-free?

Yes: leave out the rum or replace it with 0.0 rum and add a splash of apple juice for body. This is also the most child-friendly frozen drink there is.
