The differences in size determine which one you choose. The 45 cl Chardonnay is the smallest bowl and suits fresh white wine that you do not want to leave in the glass for too long. The 55 cl Chardonnay Grand Cru gives fuller white wine and lighter red wine more room to breathe. For red wine, choose the 70 cl Bordeaux for full-bodied, tannic bottles, and the 75 cl Burgundy for Pinot Noir or Nebbiolo, where the wide bowl gathers the aromas. Fill a wine glass to about one-third full, roughly 15 cl in the 70 cl Bordeaux glass. At this level, you can swirl without spilling, while the aroma remains above the wine's surface.
