Start with the glass you reach for most often. The 25 cl wine glass is the safest choice for both white and red: fill it to about a third and you have roughly 8 cl in the glass with room to spare above the wine. The 17 cl version is smaller and suits sweet wine or sherry. For whisky and aged jenever, reach for the 23 cl tumblers; the 32 cl version has room for a large block of ice. The cut pattern runs to just below the rim, which means you pour at an angle to stop drops running down the facets. Crystalline glass contains no lead, so it can go in the dishwasher as long as you use a short programme and keep the glasses from leaning against one another. The facets are the vulnerable part: when two cut edges rub together, dull patches appear that never come out again. Stand the glasses upright in a rack or a glassware set basket, and wash the flutes by hand where you can. Limescale in the grooves comes off with a cloth and a little vinegar.
