This Yarai mixing glass from Bar Professional is made of glass, holds 55 cl, and features the characteristic diamond pattern on the sides. It is the size in which you can make one or two stirred cocktails at a time.
Stirring with this mixing glass
The Yarai pattern is Japanese in origin and does more than just look attractive: the cut diamonds provide grip, so the glass will not slip from your hand when the outside becomes misted. Fill it two-thirds full with ice, add the ingredients, and stir gently along the inside wall for fifteen to thirty seconds with a long bar spoon. You want to chill and lightly dilute the drink, not slosh it around. The wide opening lets you see how much the ice has already melted.
Choosing and maintaining it
Fifty-five centilitres is the most commonly used size behind the bar: large enough for two martinis, yet small enough to chill quickly. Strain with a julep strainer from the cocktail strainers. Rinse the glass immediately after use, because syrup and citrus can seep into the cut pattern and harden there. Wash it on a normal cycle and polish it with a dry cloth.
