Cherry wood sits precisely between mild and robust. With Bar Professional Speakeasy Cherry Wood Smoking Chips, you give a cocktail a full, slightly sweet smoky flavor with a darker undertone than apple, without the wood overpowering the drink. That makes it the most versatile choice in the range: it works just as well with a bourbon Old Fashioned as it does with a rum serve or a mature red wine. The chips are untreated and finely shaved, so they catch quickly and smolder evenly.
How to smoke with them
Put half a teaspoon of chips in the chamber of your cocktail smoker or on a fireproof dish. Light them with a torch until they glow rather than flame, and capture the smoke under an inverted glass or cloche. Let it infuse for twenty to thirty seconds, stir briefly, and pour. If you smoke it longer, the drink will become bitter—shorter is always an option. Cherry wood pairs especially well with vanilla and caramel notes, so let it loose on bourbon, rye, and aged rum.
Storage and use
Keep the chips dry and sealed; damp wood smolders poorly and produces musty smoke instead of clean smoke. Do not store them next to strongly scented products, as dry wood readily absorbs aromas. Since you use only a fraction per serving, one package will last for dozens of cocktails.
