The capacity indicated on a beer glass is the total capacity, not the serving size. So in the 40 cl glass, you pour about 33 cl of beer with two fingers’ worth of foam on top. This is the size for specialty beer, tripel, and weizen. The 26 cl size is intended for stronger beers that you drink in smaller portions, such as a quadrupel or barley wine. Hold the glass at an angle and pour down the side, only setting it upright once it is half full. This builds a firm head of foam without the beer overflowing. A wet glass produces better foam than a dry glass, so rinse it with cold water before pouring.
