Arcoroc Cervoise

Cervoise is Old French for beer, and the goblet that bears this name has become part of the standard image of a Belgian café: a rounded glass on a short stem, with a rim that curves slightly inward. This rounded shape gives the beer room to release its aromas, while the narrower rim then holds them beneath your nose.

Arcoroc makes the Cervoise in three sizes, from 32 to 50 cl, and supplies them in sets of six. It is hospitality glassware, made to go through the commercial dishwasher every day.

Which Cervoise size do you need

The size follows the bottle. A standard 30 cl bottle of specialty beer goes into the 32 cl goblet, which then fills to roughly the widest point and still leaves room for foam. If you want to serve that same bottle with a more generous head, or if you pour from 33 cl bottles, 38 cl is more comfortable. The 50 cl goblet is meant for the large 75 cl bottles you share between two people, and for abbey beer you pour out in one go. All three sizes come in packs of six.

How to pour a specialty beer

Tilt the goblet and let the beer run down the side until the glass is half full. Then stand the glass upright and pour the rest into the middle from slightly higher up, so you end up with a head of two to three centimetres. With abbey beers and trappists, leave the last layer of yeast behind in the bottle, unless the beer is meant to be poured cloudy. Do not serve it too cold: at around eight degrees the spicy and fruity notes open up far better than at four, and that is exactly what this rounded shape was made for.

Beer-clean glasses keep the head standing

Grease is the enemy of a good head. The thinnest film of washing-up liquid or a few fingerprints will collapse the foam within half a minute. So wash the Cervoise separately from greasy plates, rinse thoroughly and dry it with a cloth you use for glassware only. The glass itself is tempered and built for heavy use, so the dishwasher is no problem. Do place the goblets upright rather than upside down, otherwise water stays sitting on the foot.
