The difference between 40 and 50 cl is bigger than it looks, because both glasses are filled to the fill line and not to the rim. Half a litre of beer will not go into the 40 cl glass; count on a third of a litre plus a finger-thick head. The 50 cl glass is meant for the full half litre and is therefore the standard for German pilsner and helles. If you mainly pour craft beer with a higher alcohol content, take the smaller model, because those beers are drunk in smaller servings. For mixed company, a combination of both sizes is the most practical. Compare with the shorter pilsner glasses as well.

Hold the glass at an angle of about forty-five degrees and pour along the wall until it is two thirds full. Then stand it upright and pour the last centilitres into the middle, so the head builds to a good finger thick. Serve pilsner at around seven degrees, because colder than that numbs the bitterness. For a kopstoot you put the glass on the table next to a shot glass of jenever, so you alternate a sip of beer with a sip of jenever.

Beer glasses have to be grease-free, otherwise the head collapses. So wash them separately from greasy plates and keep the rinse aid dosage low, because a leftover film breaks the foam. Iserlohn is machine-blown soda-lime glass and takes the dishwasher perfectly well. Store the glasses upright on an open shelf rather than upside down on a cloth, because an inverted glass holds on to moisture and smell.
