Choose the bowl based on the wine, not the table. The 31.2 cl white wine glass keeps a standard pour cool because little surface area is exposed to the air. At 40.8 cl, you get the universal size that works for both white and young red wines. For Bordeaux, there is the tall 64.5 cl bowl, while the 81.4 cl Burgundy shape is intentionally wide and rounded, giving highly aromatic wine room without overfilling the glass. Pour to the widest point and hold the glass by the stem. In an 81.4 cl Burgundy glass, that means it is about one-quarter full, which looks frugal until you realize how much aroma lingers in the space above.

The 21 cl champagne glass has a cut mousse point in the bottom where carbon dioxide attaches, keeping the trail of bubbles going. Pre-chill the 27 cl martini glass in the freezer, for example, for a dry martini. For a french 75 , use the flute.

Fully tempered glass handles the dishwasher better than the thin wall suggests, precisely because the transition from stem to bowl is no longer a weak point. Wash on a short glassware programme and rinse with soft water.

A film of limescale stands out particularly on clear crystal glass and disappears with a dash of vinegar in the rinse water. Store the glasses upright afterwards with space between the stems, because more damage happens in the cupboard than at the table.
