This margarita glass from Bar Professional has a capacity of 28.5 cl and is made of clear glass. The wide, shallow bowl on a stem is the classic model for margaritas and daiquiris served without ice.
Serving in this glass
The shape originated around the salt rim: the wide, flat rim provides enough space to moisten it evenly and dip it in salt. Use a glass rimmer rather than a dish, so the rim stays neat and no salt gets into the drink. Chill the glass in the freezer beforehand or fill it with ice water while you shake; a cold glass keeps an ice-free drink at the right temperature noticeably longer. Pour to about one centimeter below the rim.
Choosing and maintaining
28.5 cl is the standard size for a single margarita of approximately 12 cl, plus foam and garnish. If you serve frozen variations, the larger version is more convenient, as crushed ice takes up a lot of volume. Wash the glass on a moderate cycle and place it upright in a rack with dividers; the thin rim is the most vulnerable part. Rinsing with soft water keeps the bowl clear.
