Stolzle Symphony

The four bowls run from 40 to 71 centilitres, and that difference does more than you would think. The 40 cl glass keeps white wine cool because you finish it in two goes. At 54 and 64 cl a full-bodied red gets air without the serving getting out of hand, and the 71 cl is meant for burgundies and other fragrant bottles that you fill only to a third. For the rest of the table there are tumblers of 38 and 50 cl, a 46 cl long drink glass and a 29 cl flute. Everything comes in sets of six.

Fill a bowl to just below its widest point, so you keep air above the wine and can swirl without spilling. With the 71 cl that means about a third of the glass. Red wine does not need to be at room temperature: around sixteen degrees it comes across as livelier. Fill the 29 cl flute to a centimetre or two below the rim, so the bubbles keep a path upwards. The 46 cl long drink glass does its work with a Tom Collins or an Aperol Spritz.

Symphony is drawn from crystal glass to which titanium has been added instead of lead. That makes the rim thinner and the stems sturdier, and the glass can simply go in the dishwasher. Do not place the bowls against each other in the rack, because the stems break from knocks sooner than from heat. Rinse afterwards with a short programme without rinse aid if you see limescale streaks.
