Pour wine up to the widest point of the bowl. In the 26.5 cl glass that works out at roughly a standard measure, which is handy if you work without one. Stemmed beer is poured at an angle and straightened at the end to build the head.

Chill the martini glass beforehand. Put it in the freezer for ten minutes or fill it with ice and water while you shake, tip it out and only then pour. A dry martini or a cosmopolitan then stays cold to the last sip, because there is no ice in this glass to take over the work.

Perfection is made from tempered soda-lime glass. Tempering happens by cooling the glass rapidly after forming, which builds tension into the surface and lets the rim take knocks better. That is exactly why this range lasts so long in hospitality.

The glasses can go in a professional glasswasher and in an ordinary dishwasher. Do not use too much rinse aid, because an excess leaves a haze on the bowl instead.
