Bormioli Rocco Restaurant

Anyone who has eaten in an Italian restaurant has probably drunk from one. Restaurant by Bormioli Rocco is one of the most widely used wine glasses in Europe: a simple, timeless bowl on a short stem, made to go in and out of the dishwasher hundreds of times a week without looking worn.

The range is broader than just wine. Alongside 42.5 and 52.5 cl wine glasses, it includes a 43 cl tumbler, a 24 cl champagne flute, and a small 8.1 cl grappa glass. You can order them in small sets of two or three.

Which size from the Restaurant series suits you

The two bowls differ mainly in headspace. At 42.5 cl you have a glass that is roomy enough for white and light red wine and that does not get in the way on a crowded table. The 52.5 cl gives a full-bodied red wine the room to open up, provided you fill it to about a third. The 43 cl tumbler is the water and soft drink glass that belongs alongside it, and the 24 cl flute is unusually roomy for a flute shape, which is handy if you also pour an aperitif into it. The 8.1 cl grappa glass completes the line.

Pouring like they do in a restaurant

Hold a bowl by the stem, not by the belly, and the wine will not warm up from your hand. Pour to the widest point and not a millimetre higher: on the 52.5 cl that is about a third of the glass. Make an aperol spritz in the tumbler with plenty of ice, three parts prosecco, two parts aperol and a splash of soda water. The roomy flute also takes a bellini with peach purée, which you stir gently upwards so the bubbles survive.

Why this glass survives a commercial dishwasher

The bowls are blown in one piece, with no glued seam between stem and bowl. That is exactly where cheap wine glasses break, and it is why this series holds up in a commercial dishwasher. The rim is also heat-treated and therefore less prone to chipping. Stand the glasses upright in a glass rack and do not rinse above sixty degrees; that keeps the glass clear.

Where to look next

Looking for another model from the same brand? Have a look at the rest of Bormioli Rocco. If you want a larger bowl with a thinner wall, you are better off with the crystal wine glasses than with this hospitality version. For grappa and limoncello there are separate small glasses with the limoncello glasses. And to keep the narrow flute clean on the inside, a glass brush works better than a tea towel.
