The 23.5 cl is the size for cappuccino and flat white and provides enough height for milk foam to build up without spilling over the rim. The 9 cl is the espresso size: a 6 cl double espresso still leaves room for the crema. With double-walled glassware, pay particular attention to the wall thickness and the shape of the rim, as a thin, slightly outward-curved rim feels more comfortable on the lips than a thick, straight one. Rinse the glass first with hot water, because cold double-walled glass draws away heat and your cappuccino will otherwise cool down within a minute. Pour the milk foam in one motion from about five centimeters above the surface, then move down toward the edge so the layer stays intact. A double-walled glass has a small air hole on the underside that regulates the pressure between the walls. If water stays behind in it, condensation appears between the walls that never comes out again. Always let the glasses dry upside down and at an angle. They can go in the dishwasher, but put them on the top rack and not wedged in, because the thin outer wall is the first to give way under pressure.
