The 23.5 cl is the size for cappuccino and flat white, tall enough to let the milk foam build without going over the rim. The 9 cl is the espresso size: a double espresso of 6 cl still leaves room for the crema. With double-walled glassware, pay attention above all to the wall thickness and the shape of the rim, because a thin, slightly flared rim feels nicer against the lip than a thick straight one. Rinse the glass with hot water first, because a cold double-walled glass draws the heat away and your cappuccino will otherwise go cold within a minute. Pour the milk foam in one movement from about five centimetres above the surface and then lower towards the rim, so the layer stays intact. The espresso from the small glass is also the base of an espresso martini. After dinner, a sgroppino fits beautifully on the same table.

A double-walled glass has a small air hole on the underside that regulates the pressure between the walls. If water stays behind in it, condensation appears between the walls that never comes out again. Always let the glasses dry upside down and at an angle. They can go in the dishwasher, but put them on the top rack and not wedged in, because the thin outer wall is the first to give way under pressure.
