Old Tom, explained briefly
Old Tom is the slightly sweeter gin style that sits between the spicy genever and the dry London Dry, and it has been enjoying a major revival in recent years. A generous balloon glass is particularly worthwhile with this type of gin: the sweetness comes through better when the tonic stays properly chilled and the ice melts slowly. Fill the glass generously with ice and pour the tonic down the side.
