The story
The Ibiza Spritz is a recent cocktail. The recipe comes from Licor 43 itself, which presents it as the Ibiza 43 Spritz: a fruity, summery drink designed to taste like a holiday in the Balearic Islands, even when you’re simply sitting at home on the balcony. Bar industry magazines have also adopted it, with the same three ingredients and at most slightly different quantities.
Licor 43 is a golden-yellow Spanish liqueur from Cartagena, made by the Zamora family. The name refers to the 43 ingredients in the recipe, with citrus and vanilla as the most prominent flavours. A spritz is originally an Italian drink made with sparkling wine and a bitter aperitif, such as the Aperol Spritz. In the Ibiza Spritz, grapefruit soda provides the bubbles and bitterness.
The right glass
You drink the Ibiza Spritz from a large wine glass filled with ice, just like the Aperol Spritz. A spacious bowl of 45 to 50 cl holds enough ice to keep everything cold, while the aroma of grapefruit and vanilla lingers in the glass. A spritz glass works just as well. The right tools

What do you use to make an Ibiza Spritz?
For an Ibiza Spritz, you need Licor 43, a Spanish liqueur with vanilla and citrus. Use the Original; the flavoured varieties such as Licor 43 Horchata and Licor 43 Crème Brûlée are creamier and less suitable for a refreshing spritz. Variations & twists
Recipes mainly differ in the quantities: some use 5 cl of Licor 43 and 12 cl of grapefruit soda, but the ratio remains almost the same. For more bubbles and less sweetness, top up with half grapefruit soda and half cava or prosecco. Squeezing a strip of grapefruit peel over the glass adds extra aroma. Looking for more inspiration? Serving tip
Use plenty of ice: the glass should be filled to the rim. With too little ice, it melts quickly and your spritz becomes watery. Add the soda at the very end so it stays fizzy.

Which grapefruit soda?
The recipe calls for pink grapefruit soda, a fizzy soft drink with grapefruit. Choose one that is not too sweet, as Licor 43 already adds plenty of sweetness. Grapefruit juice without carbonation also works, but then you miss the bubbles that make it a spritz. Chill the bottle well so the ice melts more slowly.
How strong is an Ibiza Spritz?
Licor 43 contains 31% alcohol. With 4 cl of liqueur and 12 cl of lime juice and soda, you end up at around 8%, even before the ice melts. That is less than a glass of wine. The ice makes it even lighter in the glass.
What is Licor 43?
Alcohol-free Ibiza Spritz
Leave out the Licor 43 and bring back the vanilla with a splash of vanilla syrup, for example from Monin. Keep the lime juice at 2 cl and top up with pink grapefruit soda. This preserves the fresh, slightly bitter character without alcohol.
