Adding smoke to a cocktail doesn’t have to be a complicated ritual. This wooden cocktail smoker from Bar Professional Speakeasy is a compact attachment that you place directly on a glass, tumbler, or small carafe. At 12.4 cm wide, 11.2 cm deep, and 6 cm high, it takes up hardly any space at your station, while the solid wood feels comfortable in your hand as you work. Because the smoke chamber is located at the top, the glass remains unobstructed and you can serve without having to take everything apart first.
Working with wood chips
Fill the chamber with a small scoop of chips, place the smoker on the glass, and ignite with a torch until the chips begin to smolder. Let the smoke infuse for half a minute to a full minute, then serve immediately so the aroma is still hovering above the drink when the guest picks up the glass. The type of wood determines the character: oak and hickory provide a robust, almost barbecue-like note, while apple and cherry are sweeter and more subtle. This makes the smoker highly versatile, from an Old Fashioned with bourbon to a mezcal Negroni or even a smoked alcohol-free serve. The torch and chips are sold separately, allowing you to choose which flavors you offer.
Care and ordering
Allow the smoker to cool completely, tap out the ash, and wipe the wood with a dry cloth. Do not put it in the dishwasher or soak it: wood stays at its best with dry care.
