Eton mess is an English dessert made with strawberries, softly whipped cream, and broken meringue, loosely layered in a glass. It is called mess because it is meant to be messy: no neat layers, but red running through white. The only hard rule is to assemble it at the last moment, because meringue dissolves in moisture. Making eton mess: step by step

Wash the strawberries, remove the tops, and divide them into two equal halves. Mash one half with the powdered sugar and a few drops of lemon juice into a coarse coulis and let it stand for ten minutes. Cut the other half into pieces, because without whole pieces you’ll end up with only sauce and no bite.

Whip the cold heavy cream until it is softly whipped and just holds traces of the whisk. Stop while it still has a slight sheen and moves. Firmly whipped cream becomes a solid mass in the glass that can no longer be marbled with the coulis, and whipping it further will make it grainy.

Break the meringue into large pieces with your hands, not into crumbs. Large chunks provide the crisp bite you want in an eton mess; small crumbs dissolve in the moisture from the strawberries and cream within a few minutes.

Just before serving, loosely layer everything in the glass: a layer of cream, a spoonful of coulis, pieces of strawberry and meringue, and then repeat. Don’t stir it smooth, as it should remain marbled. Put the glasses on the table immediately.

The story

Eton mess is named after an English school and, according to tradition, is served there at an annual sports day. No one knows for certain exactly how the dessert came about. In one version, a pavlova was crushed on the way to the field and the pieces were simply scooped up with the cream; in another, there was simply a bowl of strawberries and cream to which someone added meringue. The accounts differ, and none can be substantiated. What is true is that the name describes the result, because mess means disorder. It is one of the few desserts where serving it untidily is not untidy but the whole point.

The right glass

An Eton mess is a mess, but one that deserves to be seen: red running through white, with white chunks of meringue in between. That image only works when the glass is clear and you can look through it from the side. The ice cream coupe below holds twenty-eight centilitres and, according to the description, the clear glass lets you see the layers of a dessert clearly, for example in a coupe with strawberries; it is 8.6 centimetres high and 10.9 centimetres in diameter, so a spoon can easily move around inside. Next to it is a twenty-two-centilitre coupe, described as a wide, shallow champagne bowl. It is lower, so you see less of the marbling, but it is easier to scoop from. Variations & twists

Using raspberries instead of strawberries gives you a sharper, tarter version and means you need less sugar. Rhubarb works too, but it must first be briefly stewed with sugar until it breaks down; otherwise it remains hard and sour. Passion fruit adds a tropical twist: spoon the pulp and seeds over the cream instead of turning it into a coulis. And if you want the whole thing less sweet, leave the icing sugar out of the whipped cream and use it only with the mashed strawberries. Looking for more inspiration? Serving tip

Put the glasses in the fridge half an hour before serving; the cream will stay firmer. Prepare the components calmly in advance: the coulis, sliced strawberries and whipped cream can be kept covered and chilled for a few hours. Only assemble everything at the last moment, if necessary at the table, because from that point the clock is ticking for the meringue.

Why does meringue become soft in this dessert?

Meringue is sugar and whipped egg white, and sugar attracts moisture. As soon as the pieces come into contact with cream and strawberry juice, they start to dissolve; after half an hour, little of the crispness remains. That is why eton mess is not a dessert you assemble in advance. All the components can be ready, but they should only go into the glass once the plates from the main course have been cleared.

How stiff should the whipped cream be?

Soft and billowy, not stiff. Whip until the cream just holds traces of the whisk and still has a slight sheen, then stop. Stiffly whipped cream stays in the glass as a solid mass and can no longer be marbled with the coulis. It also easily becomes overwhipped and grainy. Cream straight from the fridge whips most evenly.

Buy meringue or make it yourself?

Either works. Ready-made meringues from the shop work perfectly and save an hour of oven time. If you make them yourself, whip egg whites with sugar until stiff and dry the meringues slowly at a low temperature so they stay white and dry all the way through. A meringue that is not dry inside becomes chewy even faster in the glass.

Why do you mash only half the strawberries?

Because you want two things at once: flavor distributed through the cream and pieces to bite into. Mashed strawberries with a little sugar release their juice within ten minutes and become a coarse coulis that streaks red through the white. If you cut everything into pieces, the whole dessert stays dry and pale; if you mash everything, you end up with sauce and cream.

Can you make eton mess in advance?

The components can be prepared in advance, but not the assembled dessert. Coulis, sliced strawberries, and whipped cream can be covered and kept in the refrigerator for a few hours. Store the meringue dry in a sealed tin, because moisture from the air also makes it chewy. Combine everything just before serving, then serve the dessert immediately.
